Yes, its quite possible... and has been done.  That said, its not point and click... but also not terribly difficult.  It does however require multiple programs.  There is a program to extract DFFs from ISOs and then another to compile those into a new disc.  I don't personally use the programs.  That said, I do know that guides are being made.  Hopefully someone will email you with more explicit details.
