Absolutely.  I personally mic guitars and bass, and sometimes even vocals with multiple mics or direct feeds.  One should never assume that, for instance, 2 bass tracks are meant to be doubled center just because that is the norm.

instruments into the mixing board so they are different nuances and in
some case double tracking ie: the who tracks there are different takes
combined for one sound but left on their own in opposite channels make
