Don't act on FUD like that without some specifics.

What "carefully made settings" are "destroyed" by iTunes 11?

All the same encoding and playback methods are there.  Music files do not get modified by upgrading.

The user interface changes quite a bit but can be set back to the old layout pretty easily if you wish.
