Yes, that's correct Audition only mentions the depth.. My memory suffers from age too every now and then ;-)
I used to do everything in 32 bits float, but playing it back in 5.1 was impossible..... (in the past ! Don't know if that changed.)
 
However there are upmix methods where upsampling first and downsampling after the process , did make a hearable difference !
As an example : In the past I used Audition and pulses from different recording studios with convolve to produce Ambisonics.
Those pulses where avaliable in 24/44.1 and in 24/96, which were recommended to use.
There was a clear difference in the quality of the sound with upsampling to 24/96, use the 24/96 pulses and downsample the outcome back to 24/44.1 .
(Although not about the 16 vs 24 bits or 44.1 vs 96 Khz, this article describes almost the same method and is just FYI : http://convolver.sourceforge.net/binaural.html )
 
I don't use those methods anymore, because the latest methods are so much improved that 24/44.1 Khz is enough.

It's why your AVR is very probably converting all 16bit audio to 24 or 32 bit, unless you ahve it set to 'Pure Direct' output.

But I also think that changing a stereo 16 bits to 24 bits doesn't make any difference at all.
